Eucalyptus is not native to Morocco — it was introduced at the start of the 20th century to stabilize soils and supply timber. A hundred years later, mature eucalyptus stands in the Gharb and Souss plains have become reference trees for Moroccan beekeeping. Their spring bloom is brief but intense, and the bees work it with a focus that reads clearly in the honey. Our beldi eucalyptus honey is harvested on the transhumance sites where our beekeepers move hives each spring. No blending with other blooms: hives stay on the eucalyptus zone for the entire foraging window, then are pulled. The honey is then cold-decanted, never heated. This method preserves the volatile compounds the eucalyptus leaves release into the flower — and which the bee concentrates in the nectar. On the palate, an amber honey with assertive character: woody notes, gently mentholated, a refreshing finish that recalls undergrowth after rain. Less floral than most honeys, it settles roundly without excessive sweetness. Fluid at first opening, it turns onctueux after a few weeks — the natural evolution of a raw honey that has begun a quiet crystallization. Eucalyptus releases a volatile compound, cineole, known to support the respiratory tract. The honey that inherits it is traditionally used for light coughs, irritated throats or simply as a seasonal tonic. A spoonful in a hot infusion remains the classic way to take it. In the kitchen, it lifts a roast chicken marinade, perfumes a homemade honey ice cream or pairs with a strong black tea. A teaspoon is enough to perfume a dish for two.

Eucalyptus is a tree whose leaves release volatile compounds (cineole) known to support the respiratory tract. The honey that comes from it inherits part of that signature: traditionally used for light coughs, irritated throats or simply as a seasonal tonic. A spoonful in a hot infusion remains the classic way to take it.
It brings an uncommon depth to a roast chicken marinade, a homemade honey ice cream, or a strong black tea. More powerful than floral honeys, it rewards careful dosing — a teaspoon is enough to perfume a dish for two. Don't let it boil: it loses its aromatic freshness.
Several years, provided it's kept at room temperature, in a closed jar, away from light. Raw honey doesn't expire — it evolves. It may crystallize, darken slightly, but its core qualities stay intact. A wooden spoon takes honey without damaging it. Avoid the fridge, which speeds crystallization with no upside.
Eucalyptus trees were introduced in Morocco at the start of the 20th century, in the Gharb and Souss plains where they found a favorable climate. Our hives station in these areas during the short but intense spring bloom. The harvested honey is then cold-decanted, never pasteurized. Each batch is labeled with its exact production area.
Yes — it's a fine layer of crystals forming on the surface at the start of crystallization. Not a defect: it's the signature of a raw honey not industrially filtered. A short warm water bath (never above 40 °C) restores a uniform texture if you prefer, but it isn't required for consumption.
