Mountain herb honey is an altitude honey — harvested in the central High Atlas and Anti-Atlas massifs, at elevations between 1,200 and 2,000 meters. At these heights the flora changes: wild thyme, rosemary, mountain lavenders, savory, pennyroyal — Mediterranean plants adapted to Morocco's alpine climate. The bees work a natural assortment of aromatics far denser than lowland honeys — and it shows immediately. Our hives go on short summer transhumance to alpine pastures. The beekeepers track blooms in real time, never on a rigid calendar. Honey is harvested by hand, cold-decanted, and every batch is labeled with the zone and the exact altitude. No heating, no industrial filtration — the aromatic signature of high-altitude Mediterranean plants stays intact, intense, immediately recognizable from the first spoon. On the palate, a more herbaceous than floral profile, with balsamic notes and a lightly resinous finish. More typed than a classic wildflower honey, more accessible than a powerful monofloral like pure thyme. A "crossroads" honey that marries the aromatic diversity of a multifloral with the signature of high-altitude Mediterranean plants. Excellent with strong black tea, Arabic coffee, or aged cheeses. Beyond pleasure, this honey inherits the essential-oil richness of the foraged plants: antiseptic thyme, tonic rosemary, digestive savory. One of the most used honeys in traditional mountain cooking to accompany cold seasons, support the respiratory tract and soothe difficult digestion. A spoon in the morning during seasonal transitions, or in a hot infusion in the evening — the classic gesture of altitude households.

A high-altitude honey gathered in the massifs of the Moroccan Atlas, where wild thyme, rosemary, mountain lavenders, savory and pennyroyal grow. This aromatic diversity typical of Mediterranean herbs at altitude gives it a more structured and powerful profile than lowland honeys — a true terroir ID.
A more herbaceous than floral profile, with balsamic notes and a lightly resinous finish. More typed than a classic wildflower honey, more accessible than a very powerful monofloral like pure thyme. A 'crossroads' honey — it marries the aromatic diversity of a multifloral with the signature of high-altitude Mediterranean plants.
Inheriting the essential-oil richness of the foraged plants (thyme, rosemary, savory), it is traditionally used to accompany the cold seasons, support the respiratory tract and soothe difficult digestion. A spoonful in a hot infusion remains the most common gesture in mountain culinary tradition.
In the morning, as a one-spoon cure through fatigue or seasonal transitions. At the table it adapts to every classical use — aged cheeses, marinades, infusions, fine pastry. It is also excellent alongside a strong black tea or an Arabic coffee, for those who enjoy bitter-sweet pairings.
From the Moroccan Atlas, mainly the central High Atlas and the Anti-Atlas, at altitudes between 1,200 and 2,000 meters. The hives are placed there through a short summer transhumance, on alpine pastures. Each batch carries the zone and the altitude of the harvest — guaranteeing a consistent aromatic signature year to year.
Excellent at keeping. Its low water content (a sign of maturity at harvest) and its concentration of aromatic compounds protect it naturally. Keep it at room temperature, out of the light. It will evolve over time — color, texture, intensity — without losing its qualities. No mandatory expiration date on a properly produced raw honey.

Tres bon, livraison rapide
Commandé un vendredi soir, reçu le lundi suivant à Rabat. Pot bien protégé. Goût conforme à la description, légèrement résineux. Je redemanderai.
